The Italian Chicken

This recipe I acquired from my mother. She was a single mother for some time and worked full time. She came up with a few quick dinner meals and this one stuck and has been my favorite since I was 7. Now this has nothing to do with authentic Italian food, its just the one ingredient that makes it Italian Chicken. I added the peppers to give it color and additional taste that was a HUGE hit with my Love. 


  • 6-8 pieces of dark meat chicken with bone (I normally only use legs)
  • Salt & Pepper
  • 1/2 sliced sweet or yellow onion (your choice)
  • 1 sliced pepper (Red, yellow or green your choice)
  • 1 cup Wishbone Italian Dressing (creamy Italian dressing is fine as well)


Pre-Heat Oven to 350 degrees

  1. Full thaw out the chicken and soak in cool water for about 15 min
  2. Drain chicken, place in 9×12 cooking pan (corning-ware or Pyrex is best)
  3. Salt and Pepper both side of the chicken to taste
  4. Add the sliced onion and pepper
  5. Pour the dressing covering all ingredients
  6. Cook uncovered for 45 min

Additional dinner items:

  • Penne Pasta with the cooked dressing drizzled over top
  • Rice (White or Brown) cooked dressing drizzled over top
